Cocido Madrileño
This stew is one of the main exponents of Madrid tradition. With humble origins, its consumption began to become popular thanks to the fact that many restaurants made it the star of their menus.
Especially recommended in the colder months, this stew is particularly curious for its peculiar and almost ritualistic way of consumption.
Cocido Madrileño is made up of three main elements: the broth, chickpeas with vegetables and potatoes, and meat and sausages, called viandas. Instead of being eaten all together, each part, traditionally called "vuelco", is enjoyed independently.
Tripe a la Madrileña
Callos a la Madrileña is one of the most popular dishes during the winter and is typically eaten as a tapa while enjoying a double beer or a jug of wine.
Tripe is basically stewed beef offal and, although it may sound peculiar to those who are not used to it, it is delicious. In Madrid they are usually served hot in an earthenware casserole accompanied by slices of chorizo and black pudding and diced ham.
Calamari Sandwich
Perhaps one of the simplest dishes on the list but also one of the most representative of Madrid. Such is its popularity that on your walks around the capital you are sure to find numerous bars that claim to have the best in the city.
To make your experience complete, we recommend you enjoy the Bocadillo de Calamares at mid-morning in one of the bars in the Plaza Mayor along with the traditional vermouth.
Starry eggs
Also known as Huevos Rotos, this dish is one of the most popular for a tapas lunch or dinner. It consists of a generous portion of fried potatoes accompanied by other delicacies such as chorizo sausage, peppers, ham, gulas, etc. and topped with fried eggs.
When consuming it, it is customary to "break" the eggs and mix all the ingredients together so that the flavours blend.
Entresijos and Gallinejas
This is another of Madrid's typical dishes in which offal is the protagonist. Gallinejas are the fried tripe of different animals, especially lamb and chicken, while Entresijos are what is known as mesenterio, folds found near the intestines.
Its consumption became popular in the 19th century when the Legazpi abattoir, now converted into a cultural space, gave away the discarded meat to those who needed it. Many people began to fry the entrails and hens and sell them in the streets of the city, and so they began to gain popularity.
Nowadays, they are consumed especially during festivities in the capital, such as La Paloma, San Cayetano or San Isidro.
Oreja and Morro
Ears and snouts are part of most typical restaurants in Madrid. These pieces are usually eaten grilled or stewed and have a peculiar texture that will not leave you indifferent.
It is common to eat them as a tapa, with garlic or with a marinade of paprika, oil and garlic; unlike in other regions of Spain where it is customary to accompany these pieces with tomato sauce.
Churros with Chocolate
Churros con Chocolate are the quintessential breakfast and snack in the capital. A must for all sweet lovers visiting Madrid is the famous Chocolatería San Ginés, founded in 1984, where you can enjoy this delicious combination at any time of the day.
Snails Madrileña style
Snails are eaten in many regions of Spain, but in Madrid in particular you can enjoy them simmered in a delicious tomato sauce and accompanied by generous slices of cured ham and chorizo. The contrast of flavours will surprise you.
