El Eslava was one of the first of the new generation of Sevillian tapas bars to serve contemporary cuisine. A great local favourite, it's always difficult to get into the simple blue-painted bar, but it's worth it for the creative tapas.
It's hard to pick a favourite here, but the signature dish, a slow-cooked egg on a wild mushroom "cake" with caramelised wine reduction, is hard to beat. The menu also has many skilfully handled classics, such as succulent clams with garlic and olive oil.
